Stelzer Dental Winter Crockpot Recipe
Stelzer Dental patients shared their favorite wintertime crockpot recipes and we are excited to share them with you. CONGRATULATIONS Gina, from Plymouth Meeting, PA for the best crockpot recipe. Mongolian Beef (entered by Gina)
Ingredients:
1 ½ lb. Flank Steak
¼ cup cornstarch
2 Tbsp. Olive Oil
½ tsp. minced garlic cloves
¾ cup soy sauce
¾ cup water
¾ brown sugar
1 cup grated carrots
Green onions, for garnish
Cut flank steak into thin strips. Add flank steak and cornstarch into a Ziploc bag and shake to coat. Put Olive oil, minced garlic, soy sauce, water, brown sugar, and carrots to the slow cooker and stir ingredients. Add the flank steak and stir again until steak is coated with the sauce. Cook on high for 2-3 hours or low for 4-5 hours until cooked throughout and tender. Can serve over rice and garnish with green onions.
Slow Cooker Sweet Potato Chili
Ingredients:
28 oz. can tomato sauce
1 tsp. chili powder
1 tsp. cayenne pepper
1 Tbsp. ground cumin
2 tsp. paprika
1 Tbsp. brown sugar
½ tsp. salt
2 large sweet potatoes, peeled and chopped into 1” pieces
1 medium onion, coarsely chopped
2 cloves garlic, minced
2 (15 oz.) cans kidney beans, drained
1 cup corn, frozen and thawed
1 lb. ground beef sirloin (optional)
1 cup chicken broth
Instructions:
Roast corn until most pieces have a dark/charred corner. Set corn aside. Brown the meat (in a slow cooker or on a stovetop). Combine all ingredients (including corn) in the base of the slow cooker and mix well. Cook on low for 8 hours. Serve with sour cream, shredded cheese, green onions or parsley and some fresh cornbread on the side.
Sweet and Sour Meatballs
Ingredients:
1 jar (12oz) chili sauce (usually found in the ketchup aisle)
1 ½ cups grape jelly
2 lbs meatballs (I prefer to make my own but certainly can buy-I have made large size meatballs or served this as an appetizer at a party and make them smaller app size)
Put meatballs in crockpot. Combine jelly and chili sauce in a small bowl and mix well then pour over meatballs. Cook on low for approx. 5 hours.
Chicken Burrito Bowls
Ingredients:
1 to 1 ½ lbs boneless chicken breasts
1 can diced tomatoes (14.5 oz)
3/4 cup chicken stock (good to have an extra ½ cup on hand)
2 tsp. salt
2 tsp. chili powder
1 tsp. cumin
1 cup of frozen corn
1 can black beans (drained and rinsed)
1 cup of brown rice
Combine chicken breasts, diced tomatoes, chicken stock, salt, chili powder, and cumin in a slow cooker. Make sure the chicken is covered and if necessary add a little more chicken stock. Cover and cook on low for 6-8 hours.
When you get home from work-Add black beans & frozen corn to the crockpot and continue cooking on low 30 mins while you prepare the rice (approx. 30 mins is a good time for those ingredients to cook in the mix).
Use 2 forks to shred the chicken in the crockpot.
Some good toppings to add to your bowl when serving it: shredded cheese, avocado, hot sauce, shredded lettuce, or sour cream.
